A stir fry is way of cooking ingredients with a very hot oil while tossing the veggies in a wok. It's an easy way to incorporate lots of veggies and protein into a delicious dinner. This is an Asian-inspired stir-fry that will leave you wanting more!
For this recipe you will need a large skillet, I used my Le Creuset Stir-Fry Pan that is spacious and large enough to make a big batch for leftovers. This link is not affiliated, I just love Le Creuset's products!
If you have never tried sesame oil, you can find it in the Asian aisle at your local grocery store or at Asian markets. I love having sesame oil on-hand for Asian dishes because it combines all the flavors together with a light, nutty taste.

Ingredients:
1TBSP sesame oil
1.5 lbs chicken thigh, diced
1/2 yellow onion, sliced
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
6 pieces of bok choy, roots chopped off to release leaves
4 cloves garlic, diced in large pieces
1 stalk broccolini
Sauce Ingredients:
1/3 cup low-sodium soy sauce
1 TBSP oyster sauce
4 TBSP rice vinegar
2 TBSP sriracha
1 TBSP honey
1 TBSP corn starch
2 TBSP cold water
Step 1: Wash all the vegetables and cut up according to ingredients list.
Step 2: Prepare chicken by cutting into 1 inch pieces and set aside.
Step 3: In a large pan or wok, heat up 1 TBSP of sesame oil then add diced chicken into wok, cook on all sides until chicken is brown.
Step 4: Add in sliced onions and toss until onions are translucent about 4 minutes. Add the rest of the vegetables and toss until the all vegetables are tender.
Step 5: While the vegetables are cooking, prepare the stir-fry sauce. In a small bowl add the soy sauce, oyster sauce, rice vinegar, sriracha and honey and mix, then add to the wok.
Step 6: In a small bowl, add 1 TBSP of corn starch and 2 TBSP of water and mix to create the corn starch slurry and add to the wok and mix. This will help thicken the sauce.
Step 7: Let the stir-fry cook for another minute, then it's ready to serve over rice or noodles and enjoy!
