This is an easy recipe that can be made any day of the week! It's keto-friendly and you can easily swap the meat for ground beef, ground chicken or beyond ground meat. Let's get 2021 off to a healthy start!
Ingredients:
4-5 bell peppers (any color)
1 pound of ground turkey
6 baby Bella mushrooms, diced
1/2 yellow onion, diced
3 garlic cloves, minced
1 jalapeño in vinegar, diced
2 cups Cheddar Cheese
Avocado Oil Spray
Spices:
1 TBSP Black Pepper
1 TSP Cayenne Pepper
1 TSP Garlic Powder
1 TBSP Paprika
Salt TT
Directions:
Step 1: Preheat your oven to 350 degrees.
Step 2: On a cookie sheet, line the pan with aluminum foil and lightly spray with avocado oil.
Step 3: Prep your bell peppers, cut off the top about 1/8”, enough to take off the stem and open up the bell pepper
Step 4: Using your fingers, grab the sack of seeds and twist to easily take out the bell pepper seeds, continue this process for all the bell peppers.
Step 5: In a large skillet, over medium heat add spray oil to cover your pan. Then add in the ground turkey and cook until it’s brown.
Step 6: Add in the onions, mushrooms, garlic, salt, black pepper, garlic powder, paprika, cayenne pepper and the optional jalapeño. Mix and let the flavors marry for about 5 minutes.
Step 7: Once the turkey is cooked, scoop it into the pepper and layer cheese in between. Stuff the bell pepper to the top and top off with cheese. Continue this process with each bell pepper.
Step 8: Place the cookie sheet in the oven for about 10 minutes for the cheese to melt and the bell pepper to soften.
